Avocado Tuna Salad Jars

Preparation: 20 minutes
Servings: 3


For Tuna Salad
3 cans of Albacore Tuna, canned in water
1 Avocado, Ripe, Haas
2 Tablespoons of Greek Yogurt, non-fat, plain
3 Tablespoons Cilantro, Chopped
3 Tablespoons Green Onions, Chopped
Salt and Pepper To taste

For Jar Assembly
3-32 oz Glass Jars, with lids
(3x) ¼ cup Cherry Tomato halves
(3x) ¼ cup Cucumber, diced
(3x) ¼ cup Brown rice, cooked
(3x) Tuna Salad Mixture, split evenly in 3
(3x) 2 Tablespoons Celery, chopped
(3x) 1 cup of Romaine Lettuce
(3x) 3 Lemon Wedges

In a bowl, combine all tuna salad ingredients, and use a fork to mix well until a mixture is formed. Set aside
In glass jars, add all ingredients from “Jar Assembly” in the order they are written. Each jar should get ¼ cup of cherry tomatoes, cucumbers, etc.
Cover with tight lids
Refrigerate overnight
Enjoy for lunch or dinner.
